The Wines

Amphora-aged estate Cabernet Sauvignon. Luminous and sleek, the 2023 PEARL of the RAVENS, offers an unadulterated experience of Cabernet Sauvignon. With the oak influence dialed back to a whisper, the purity of the fruit is in the starring role. The 2023 vintage offers an unsurpassed expression of balance, energy, and emotion. 

Inspired by the past, CORVUS PACIFICUM, XXMMIII,  revives an Ancient Roman recipe in which 1% seawater was blended into 99% wine.  The resulting amplification of flavor and structure is striking. 

100% Cabernet Sauvignon from our estate vineyard.  Yields are kept down and organically farmed to achieve the best expression of the fruit. The grapes are hand-harvested and naturally fermented with the vineyard's indigenous yeast. Made 80% in French oak and 20% Tuscan terracotta.

The 2015 vintage shows depth and complexity, while remaining nimble and smooth.

Skin-contact Sémillon. All the opulence of the Bordeaux varietal, here in a more textured incarnation, with a shimmering amber hue and distinct flavor profile. As this wine is the SERPENTS, but with extended skin contact, its naturally called SNAKESKIN.
